Albondigas Soup, otherwise known as meatball soup is a traditional Mexican meal. Rich with the flavours of hearty vegetables and herbs and spices, it's definately a favourite on a cold rainy day. The soup is distinctive because of the chopped mint leaves that are added to it, however you can replace it with cilantro if there is none at hand as we did here.

Mix garlic mince and chopped onions with your beef mince. Add a bit of salt, turmeric and pepper and make patties out of them. Cook the patties on a non-stick fry pan (preferably without oil so as to be healthy as mince already has oil of its own) and keep aside.Take your tomatoes (either from a can or fresh – at least five of them) and blend them in a mixer.In a pot fry the onions with garlic a bit of turmeric, pepper and Italian herbs and add the tomato puree to the mix cook for 4 minutes and then add chicken stock. Bring this to a boil before you add your mince patties to it.Garnish with freshly chopped cilantro and serve hot.previous post
