One-pan chicken and potatoes is a simple and delicious dinner idea the whole family will love.
Just toss all your ingredients into a baking dish, add seasoning and roast to absolute perfection.
Ingredients:
- Three chicken legs, thighs and drumsticks
- Eight large potatoes, cut into quarters or halves
- Four small purple onions, cut in quarters
- Five cloves garlic, crushed
- Salt
- One fresh capsicum sliced into long strips
- Two chicken cubes, crumbled
- Five-Six Tbsp olive oil/or any other cooking oil
- Spring onion, chopped
Instructions:
- Rinse the chicken under running water pat dry with paper towel or leave to dry.
- Add chicken, potatoes, garlic and capsicum to a baking pan and sprinkle with salt, and crumbled chicken cube. Drizzle with olive oil/other cooking oil and toss everything to coat well. Marinate in the refrigerator for 30 minutes. Meanwhile, preheat your oven.
- Place in the oven to mid-low level and bake for 25 minutes more. Check doneness, if the potatoes and chicken thighs are soft and easily pierced with a fork, they are ready. If the chicken and vegetables have not browned up much as you would like, just broil for 5 minutes, watching carefully not to burn the chicken.
- Remove from the oven and serve right away in the baking dish, sprinkle with chopped green onion.
