International Foodie: Poha

Flattened Rice or Poha as it is known in India, is a breakfast item eaten in the south-central, west part of India and is native to the state of Maharashtra.

Should you have the good fortune to have an Indian family play host to your visit in their country, you will be able to sample this dish in it’s fullness.

This dish is not popularly to restaurants here in Papua New Guinea.

Ingredients:

*Cumin seeds

*Mustard seeds

*Flattened Rice Flakes

* Turmeric

* Peanuts

*Potatoes

*Peas

* Onions

*Green Chillies

Method:

– In a wok heat some oil, when hot add cumin and mustard seeds and as soon as they start to crackle add chopped onion, green chilli and fry.

– When the onions start to lose water and become translucent add potatoes and cook till soft then add peas and peanuts and continue frying in the pan whilst adding turmeric and salt.

– Wash the flattened rice flakes lightly (you don’t want them to get soggy) and add them to the mixture above and continue cooking for another 5 minutes.

– Garnish with chopped coriander.
